Manning the kitchen of the newest gastropub to hit the metro, PUBLIKO Eat + Drink, is celebrity chef, Carlo Miguel. Being instrumental to the success of award-winning Sydney kitchens of Chef Lothar Winkler (Lothar’s), Chef Luke Mangan (Salt), Chef Mauro Carpenterie (Two Chefs on Stanley), and Chef David Rayner (Vault) just to PUBLIKO Eat + Drink Media Kit 6 name a few, he has more than 20 years of professional experience to show for when it comes to serving up delicious meals.

Back home in Manila, he is responsible for the flourishing private catering business for Manila’s elite, called Chefs Miguel, and two note-worthy establishments: Mezzaluna restaurant and Sala and Sala Bistro which garnered him a perfect rating of 10/10 from the Philippine Tatler. Currently, he also co-owns and leads the kitchens for Draft, a European classic pub fare; Beso, which features Carlo’s signature brand of modern Spanish comfort food; and Opus, where Carlo takes modern European cuisine to a different level.

And now with PUBLIKO Eat + Drink, a relaxed gastropub where people can chill and drink imported draft beer while enjoying home-cooked meals, Chef Carlo has made another notch in his culinary belt.
